Vegan Meat? Bon Appétit! Study Says Processed Soy Retains Its Nutrients

To soy or not to soy? That’s no longer a question! Thanks to a recent study in the nutrition science journal Frontiers in Nutrition, we now know that soy doesn’t lose its nutrients when processed into vegan meat. Yet another excellent reason to go vegan!

Some brands of vegan meat, such as Before the Butcher and Tofurky, harness the power of soybeans, which are rich in magnesium, omega-3 fatty acids, potassium, calcium, iron, B vitamins, vitamin K, antioxidants, and fiber. Soy products also have a low glycemic index and minimal levels of saturated fat. So it’s terrific news that this healthy vegan protein doesn’t lose its natural goodness through processing. Bring on the vegan meat!

Unlike meat from an animal, soy foods are cholesterol-free and have notable cardiovascular benefits. According to the Physicians Committee for Responsible Medicine, soy foods can help prevent breast, prostate, and colon cancer; reduce hot flashes in menopausal women; and protect against developing osteoporosis, diabetes, asthma, and other health issues. Choosing a vegan burger over animal flesh is good for the body, and it benefits animals at the same time. It’s a win-win situation—and it’s much better for the environment.

All animals are individuals who have unique personalities, just like the cats and dogs we share our homes with. For example, cows are intelligent, form lifelong friendships with each other, and mourn lost loved ones. They interact in socially complex ways and have exceptional memories. On today’s farms, cows live in cramped, squalid conditions. They can’t engage in normal behavior and are denied everything that’s natural and important to them. At the slaughterhouse, these gentle animals are shot in the head and hung upside down before workers slash their throats and then skin and gut them—sometimes while they’re still conscious.

Let’s eat soybeans, not sentient beings! We can spare cows, pigs, chickens, and other animals unfathomable suffering just by sinking our teeth into delicious soy-based vegan meats.
