The New Vegan Cookbook You Need in Your Kitchen

If you buy just one cookbook this year, make it Vegan: The Cookbook by internationally acclaimed chef Jean-Christian Jury. With nearly 500 recipes from 150 countries, this comprehensive book showcases the diversity—and deliciousness—of vegan cuisine. With burgers and stir-fries, stews and curries, casseroles and pasta dishes galore, there’s something here for everyone. Because the recipes are accessible, with clear and easy-to-follow instructions, even novice cooks will feel comfortable trying something new in the kitchen.

Jury has a long history in the food industry. After college, he traveled around the world, working in restaurant kitchens. While running restaurants in London, his erratic eating habits and 16-hour workdays caught up with him, and he suffered a heart attack. That proved to be a turning point, and it led him to go vegan. In 2007, he opened his first vegan restaurant, La Mano Verde, in Berlin, which was repeatedly voted the best vegan restaurant in Europe. He’s now based in Los Angeles but continues to travel extensively, exploring the best of global vegan cuisine.

“For years, my goal was to surprise non-vegans with delicious vegan recipes, to show that meat wasn’t necessary for a delicious and satisfying meal,” Jury writes in the book’s introduction. “When food is fresh and brimming with flavor, it will leave you feeling sated.”

Some standout recipes from Vegan: The Cookbook include:

  • Hazelnut and Bean Burgers
  • Lasagna with Wild Mushroom Sauce
  • Crispy Orange–Ginger Tofu with Broccoli
  • Green Plantain Curry
  • Jackfruit Gyros
  • Five–Spice Stir–Fried Soba Noodles
  • Chocolate–Mint Macarons
  • Panna Cotta with Caramel Sauce
  • Lemon Cheesecake with Apricot Cream

“Vegan food, when cooked with fresh ingredients, keeps us healthy and helps us to age gracefully and stave off many common diseases,” Jury says. “Vegan: The Cookbook offers recipes to satisfy all tastes. At the root of it, vegan food is just food: vibrant, flavorful, fresh, and varied.”
